If you ever want an easy weeknight meal with the perfect balance of spicy, creamy, and sweet that you can mix with any protein this is that perfect dish. The more Chili oil you add the hotter it will be, but you don’t have to make it so hot that it is unbearable. You can easily make this a meal by pairing with a protein, I like grilled or baked chicken or shrimp, but would also go great with tofu or just by itself as a side dish.
Ingredients:
- 1 package of rice noodles
- 3 TBLS Peanut Butter
- 2 TBLS Chili Oil (I use ghost pepper oil for added heat, can also use less oil for less heat)
- 1 TBLS Soy Sauce (If using less oil, sub with more soy sauce)
- Scallions and sesame seeds for garnish
Instructions :
- Prepare Rice noodles per package instructions
- Combine peanut butter, chili oil, and soy sauce in a bowl and mix well
- Once rice is cooked add sauce to the noodles while still hot and combine
- If adding protein, mix or top with it and serve while still warm
