Ingredients:
- 1 lb medium-sized shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- Lemon wedges for serving
- Cocktail sauce or tartar sauce for dipping
Instructions:
- Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. Set aside.
- Set Up Dredging Station: In a shallow dish, combine the flour, garlic powder, paprika, salt, and pepper. In a separate dish, place the beaten eggs. Place the panko breadcrumbs in another shallow dish.
- Dredge the Shrimp: Working in batches, dredge the shrimp in the seasoned flour mixture, shaking off any excess. Dip the shrimp into the beaten eggs, then coat them evenly with the panko breadcrumbs, pressing gently to adhere.
- Heat the Oil: In a large skillet or Dutch oven, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C) on a deep-fry thermometer.
- Fry the Shrimp: Carefully add the coated shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes, or until golden brown and crispy, flipping halfway through if necessary. Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain.
- Serve: Arrange the popcorn shrimp on a platter and garnish with lemon wedges. Serve immediately with cocktail sauce or tartar sauce for dipping.
