This recipe is a great way to use ground turkey without it getting to dry.  It is also a super simple weeknight meal that packs a ton of flavor in a short period of time.  Prep is the longest part of this recipe and I shorten it by using premade Hummus, Tzatziki, and pita breads.  Cutting onions always makes my eyes water, I have tried every trick in the book and nothing works to the point that for a while I resorted to buying pre-chopped onions to avoid cutting them.  I never could find pre-sliced onions though, and there is a difference in taste in the onions fresh cut vs precut, with this recipe I have found the solution.. a mandolin.  I sliced my cold from the fridge onion using my mandolin on the 2nd thinnest setting and got the perfect slice without any watering eyes!! I have adopted this as my new way of cutting and prepping onions from now on.

 

Ingredients:

Meatballs:

  • 1lb ground turkey
  • 1TBLS garlic powder
  • 1TBLS Onion Powder
  • 1/2 TBLS Oregano
  • Dash or two of Red Pepper Flakes
  • Salt and Pepper to taste

Greek Salad

  • 1 Medium Tomato (diced)
  • 1 Small Red Onion (sliced thin)
  • 1 Cucumber (or 2-3 mini Cucumbers) (diced)
  • Kalamata Olives (optional)
  • Olive Oil
  • Salt and Pepper to taste

Toppings

  • Feta Cheese
  • Hummus
  • Harissa
  • Tzatziki
  • Pita Bread Flats

Instructions:

  1. Create your meatballs:
    1. Pre-Heat oven to 375
    2. Line a baking sheet with parchment paper
    3. Put all meatball ingredients in a bowl and mix together
    4. Take about 2 TBLS of meat mixture and roll in to a ball
    5. Place balls on baking sheet
    6. Bake in oven for 20 minutes
  2. While meatballs are baking create salad
    1. Combine all salad ingredients in a separate bowl
  3. Create Pitas
    1. Start with a layer of spread
    2. Add 2-3 Meatballs to each pita
    3. Top with salad and other toppings of your choosing
  4. ENJOY!
